What you'll need

  • 1 lb japchae
  • a pinch soy sauce
  • 4 oz gochujang
  • 1/4 cup garlic
  • 2 tbsp scallions
  • 1 cup toasted sesame oil
  • 3 cloves sugar
  • to taste flaky salt
Method

Step by step

  1. Cook the noodles a touch under, rinse, and toss with a drop of oil so they stay loose.
  2. Heat the pan until it just smokes, then flash the garlic, ginger and scallion.
  3. Sear the protein hard, add the vegetables, and keep everything in motion.
  4. Fold the noodles back in with the sauce and toss until every strand is coated.
