  • 1 lb red beans and rice
  • 1 tsp yellow onion
  • 1/2 cup garlic
  • 1 tbsp smoked paprika
  • 2 tsp hot sauce
  • 1 medium kosher salt
  • 1 lb cracked black pepper
  • to taste good finishing oil
Method

Step by step

  1. Pat the red beans and rice dry and season it well so it browns instead of steaming.
  2. Get your pan hot and render the aromatics until they smell sweet and toasty.
  3. Return the red beans and rice, add just enough liquid, and simmer until everything is tender.
  4. Taste, brighten with a squeeze of citrus, and plate while it is still hot.
