  • 1 cup soy sauce
  • 3 cloves dashi
  • 1 tsp mirin
  • 1/2 cup scallions
  • 1 tbsp toasted sesame seeds
  • 2 tsp fresh ginger
  • to taste flaky salt
Method

Step by step

  1. Toast the spices in a little oil until fragrant, watching so they do not scorch.
  2. Cook the onion, garlic and ginger low and slow until soft and sweet.
  3. Add the katsu curry, then the liquid, and let it barely simmer to build depth.
  4. Round it out with a swirl of cream or a handful of cilantro before serving.
