  • a pinch dashi
  • 4 oz mirin
  • 1/4 cup scallions
  • 2 tbsp toasted sesame seeds
  • 1 cup fresh ginger
  • to taste fresh herbs, to finish
Method

Step by step

  1. Bloom the whole and ground spices in hot oil until they smell toasty.
  2. Add the onion base and cook it down slowly until jammy and deeply colored.
  3. Stir in the katsu curry and liquid, then simmer gently so the flavors marry.
  4. Finish with cream or fresh herbs, check the seasoning, and serve with rice or bread.
