  • 1 lb dal makhani
  • 1 tsp yellow onion
  • 1/2 cup garlic-ginger paste
  • 1 tbsp ground cumin
  • 2 tsp turmeric
  • 1 medium garam masala
  • 1 lb fresh cilantro
  • to taste good finishing oil
Method

Step by step

  1. Toast the spices in a little oil until fragrant, watching so they do not scorch.
  2. Cook the onion, garlic and ginger low and slow until soft and sweet.
  3. Add the dal makhani, then the liquid, and let it barely simmer to build depth.
  4. Round it out with a swirl of cream or a handful of cilantro before serving.
